CUCUMBER AVOCADO ROLLS

1 garlic clove (minced)
1/4 tsp – freshly ground pepper
1/4 cup – fresh mint (finely chopped)
1 – large Ontario greenhouse cucumber
2 – large ripe avocados (about 1 cup mashed)
1.4 cup – finely crumbled feta cheese (well drained)
4 tsp – lemon juice
Cut cucumber in half and thinly slice lengthwise using a vegetable peeler or mandolin slicer. Cut each cucumber half into long thin slices. Pat slices dry with paper towel and arrange on a paper-towel lined tray.
With a fork, mash the avocado with feta, lemon juice, garlic, and pepper until smooth. Stir in mint.
Place 1 heaping teaspoon of the avocado mixture at one end of each cucumber slice. Roll into a small log. If the mixture is too soft, chill in the refrigerator for a few minutes. Store, tightly covered, in the refrigerator for 2 hours before serving.
