INGREDIENTS

1 tbsp - Olive oil
3 tbsp – Fresh lime juice
Salt & Freshly ground black pepper to taste

2 – AMCO Select english cucumbers, diced
1.2 cup s– Finely diced red onion
1-    Jalapeño (with seeds), diced


DIRECTIONS

Mix diced cucumber, red onion, jalapeño and cilantro in a medium bowl. Stir in lime juice and olive oil. Season to taste with sea salt and freshly ground black pepper.
