Today is National Sandwich Day.
Yes, you heard right, a day dedicated to everything sandwich.
Now, before you start shaking your head and questioning who exactly comes up with these new, bizarre holidays - just take a deep breath and let it go, because this here, is a good one.
If you are any kind of food lover (and I mean ANY) you have definitely enjoyed a great sandwich at least once or twice. I mean whats not to love? There literally is a sandwich for every situation. You can enjoy a sandwich for breakfast, lunch or even dinner and experience it in most, if not all countries in a whole new way.
With all the different varieties out there it was no easy task choosing a sandwich to share on this all mighty national day of sandwiches. Lets just say there was lots of testing involved and it came down to three important factors:
- Is it Tasty?
- Is it simple to make?
- And can the recipe be modified for health purposes?
The answers are yes, yes and yes. This sandwich has it all.
ABOUT THE RECIPE
This Turkey and Avocado Pesto Sandwich would be fantastic for any occasion, really. It's so easy to make and the deli-style turkey can easily be swapped for leftover roasted turkey if you're looking for a heartier sandwich.
When it comes to picking your sandwich bread, go for something with crunch but not too much like a ciabatta or multigrain bread. Avoid using hard baguettes, they tend to be to difficult to eat and get in the way of the flavour.
Your fresh ingredients are equally as important. Make sure you use a good tomato like AMCO Select One Beefsteak Tomatoes. Beefsteak are a more meaty and succulent variety and don't need anything more than a sprinkle of salt. This will enhance the flavour of your sandwich and you'll love the juicy goodness.
Now, about the pesto.
Oh man, this avocado pesto is everything and more. While it's definitely not your traditional pesto, If you're a pesto lover you'll certainly appreciate how heavenly it tastes. You can even use it on your favourite pasta.
Yield: 1 Sandwich
- 2 ounces oven-roasted deli turkey
- 2 slices Bacon
- 2 slices bread
- 1 beefsteak tomato, sliced
- ½ cup mozzarella cheese, shredded
- 1 cup packed fresh basil leave
- 1 ripe avocado
- 2 cloves garlic
- 2 tablespoons pine nuts
- 1 tablespoon fresh lemon juice
- 3 tablespoons water, plus more if necessary
- Sea Salt & Pepper to taste
In a food processor combine all the ingredients except water. Pulse until pesto is chopped and then add water and process again until smooth.
Place in refrigerator in sealed container until ready to use.
Cook the bacon until crispy
Spread the basil pesto on each slice of bread and arrange the deli turkey, bacon, and tomato slices on the bottom side. Sprinkle shredded mozzarella on top and close sandwich.
Place in oven or toaster oven for 3 minutes, or until cheese is melted.
